INGREDIENTS

  • 2 Tbsp olive oil
  • 2 Tbsp fresh mint, minced
  • 2 large shallots, diced
  • 2-3 cloves of garlic
  • 1 ¾ cup fresh or frozen peas
  • 1 ½ cups vegetable broth
  • 1 ½ tsp Sunfood Moringa Powder

 

INSTRUCTIONS

Heat the olive oil over low heat in a medium pot. Finely shop the mint, shallots, and garlic cloves. Add these ingredients to the pot and cook over low heat until shallots are translucent, about 5 minutes. Add the peas and broth and bring to a simmer. Stir occasionally and allow soup to simmer for about 15 minutes. Add the Moringa Powder and cook for another 1-2 minutes. Pour soup into a high-power blender or use an immersion blender. Blend until smooth and season with salt and pepper, to taste. Serve with a drizzle of olive oil on top.
